My go to quinoa, chicken, & feta bowl

Summer is here and for most of us that means eating healthy to keep our body looking good for the season. I know it can be hard at times to keep from indulging on carb loaded foods like fehttuchini alfredo or loaded baked potatoes and that is why quinoa is my go to grain. Quinoa has the same consistency as rice but with twice as many benefits. In my opinion, quinoa is a super grain. It's high in fiber, has more protein than the average grain, and is loaded with iron, magnesium, and other nutrients. So this summer if you're looking to bulk up your food , try quinoa. One of my favorite go-to recipes is a quinoa, chicken, feta bowl. Here is how I make it:
Ingredients : quinoa, kale, diced tomatoes, feta cheese, chicken, seasoning of your choice
First, start out with making the quinoa. Follow the instructions on the packaging. For one serving , my brand requires I add a 1/4 cup of quinoa to 1/2 cup of water and let it come to a boil on a medium-high temperature setting. Once it boils, reduce the temperature to a low setting and place the lid onto the pot. Let the quinoa cook for about 10-15 minutes or until the quinoa is tendered and most of the water is absorbed.
While you are cooking your quinoa, grill your chicken. (Before grilling I usually sprinkle on garlic, pepper, and cayenne for extra flavor.) To make the chicken easier to consume, I cut it up into cubes. Don't worry they don't have to be perfect. Just small enough to not choke on while you are eating.
Now here is the fun part. Sauté your kale and diced tomatoes. I generally cook everything in coconut oil because it is a healthy fat that promotes digestion.
At this point you should pretty much have everything done. You just need to combine in. Get out a medium sized bowl, add your quinoa, chicken, kale, tomatoes and mix everything together. For decor and additional flavor sprinkle a tablespoon of feta on top! Voila your meal is complete.
